Three-Cheese Yellow Squash dish

I love to whip up eggs, add cheeses like mozzarella, Jack, Parmesan and layer yellow squash, onions and this time oyster mushrooms seasoned with salt & pepper, garlic flakes and a pinch of tarragon in the eggs. I also added milk to my eggs to extend them and cover all the vegetables and bake at 375 degrees until it's puffy and cooked within...

Delightful flavor as a side or main dish.
