Pickling Daikon, homegrown carrots, Maui onions & peppers

I made a brine of white vinegar, sushi vinegar, a splash of apple cider vinegar and added peppercorns, a few cloves, sugar, Hawaiian salt, fresh thyme and dill which I boiled for a few minutes then poured over my daikon, onions, peppers, parsley and carrots.

Now I'll do the hot water bath to preserve....
