Does anybody love lilikoi jelly?

I'm boiling my jars in a hot water bath for ten minutes. Woohoo...
Then I'll let them cool before I check each rubber seal for tightness and dry each rim with a towel.
Anyone canning out there? What is your favorite fruit or vegetable to preserve? I love mangos, lilikoi, papayas, coconut and today I'm preserving my first pickled daikon with baby carrots, kula onions, red peppers and thyme. Any suggestions?
