Pineapple-Carrot Cake

Today I made a pineapple-carrot cake!

It's quite easy really. I sifted
2 cups flour
2 tsp baking powder
1 1/2 tsp. Baking soda
1 tsp. Salt
2 tsp. Cinnamon
Then Creamed 1 stick of butter (4oz.)
with 1 1/2 cups of sugar. Added 1 cup vegetable oil and 4 eggs and beat them lightly then added to my dry ingredients.

Next comes 2 cups grated carrots,
1 cup crushed pineapple 1 cup raisins 1/2 cup dried cranberries

Mix it all together and pour into a greased and flour bundt pan.
Bake at 350 degrees for 40-50 minutes. (until a bamboo skewer comes out clean)
Let it cool then make cream cheese frosting.
1 8oz. Cream cheese
4 oz. (1 stick) butter
2 cups powdered sugar
1 tsp. Vanilla
Beat until fluffy and frost the cake.


Mine wasn't quite cool...
