Making Spaghetti Sauce

Just started to simmer cubes of eggplant with 1lb. Maui Cattle ground beef, sautéd onions and 5 cloves of garlic, Italian spices (basil, rosemary, oregano, thyme, sage and marjoram).
Added two 15oz. Cans of tomato sauce and 2 cans stewed tomatoes.

simmer for one hour and serve over pasta. I love spaghetti....
